I would like to start by letting you all know just how much I am enjoying this Featured ingredient of the month! It’s been great trying out new recipes and learning about everyday ingredients. I have learnt so much about fresh seasonal produce, but this month I have decided to do something a little different. This month I have decided that the featured ingredient should be protein based, lets face it most of us are not vegetarians and personally I know that I couldn’t be as I love meat way too much! So after much debate I decided to go with one of my all time favourite ingredient……(Drum Roll)……BACON!
Bacon, need I say any more!? To paraphrase one of my favourite Chef’s Mr Anthony Bourdain “Bacon is a gateway meat, if you can get a vegetarian to eat bacon then they are sure to be hooked!” And you know what, he’s right! Although traditionally used in savoury dishes you’ll be surprised to learn that it can also be used in sweet dishes, giving them a saltiness that balances them out. If that doesn’t blow your mind, bacon infused whiskey is a must try!
When buying Bacon look for…
The best advice I can give you when it comes to buying bacon is to check the ingredients. Good quality bacon’s list of ingredients should look something like this: “Pork, water, salt, sugar” and not much else. The more ingredients beyond that, the more processed it will be. If there are any ingredients you can’t pronounce, I would think twice before buying it.
How to cook it…
I always start my bacon off in a cold pan. Why? Because it helps render off the fat and your then your left with delicious bacon! Now when it comes to doneness thats all about personal preference, I like mine extra crispy yet my Children like it on the chewy side. The difference is the amount of cooking time.
