Featured Blog: Easy Summer Entertaining with Riccadonna

Summer is finally here and we all know what that means… Yes thats right, fun in the sun! I know that this means different things to different people, for some it means long days at the beach others it means bike rides and picnics but for me it means BBQs, dinner parties, long lazy lunches with family and friends! I know that for some of you the thought of entertaining at home makes you break out in hives but take a deep breath I am here to help make everything stress free!

When I was thinking about writing this I was thinking of entertaining tips and tricks that I could share with you all and I remembered about an awesome event I recently went to for Riccadonna. It was a lunch catered by the very talented Massimo Mele, he created one of the most tasty and simple menus I have seen in a long time and every course was matched with a different sparkling wine by Riccadonna! And hey what girl isn’t in heaven with sparkling and food!?

The menu was so straight forward that I asked if I could share it with you all and hopefully inspire some of you to use some or all the dishes at your next party, or even this Christmas!

We started with seared Tuna and sticky roasted eggplant which was paired with a Ruby. The tuna was light and fresh which matched beautifully with the rich eggplant and the Moscato. Next up was Massimo’s version of stuffed figs, filled with blue cheese and then wrapped with pancetta and served with Ruby. I would never have thought to pair Ruby with a savoury dish, but the pairing was incredible! Next up was my favourite course, crispy skin salmon on a pea puree and fennel salad paired with Prosecco not only did I love the salmon dish but I also loved the Prosecco and the pairing was out of this world! To finish things off Massimo made baked peaches served with my favourite of all the Riccadonna drinks Asti. This was such a clever dish, a great way to use peaches as Massimo cut them in half, stuffed them and then baked them (I will be using this idea for many a dinner party!) which kept them light.

Now that we have covered the food we have to talk table setting! When I walked into Salt Meats Cheese I was blown away at how pretty it looked. One long table, table runner, flowers and bottles of Riccadonna down the centre. It was breath taking and it all looked very charming. Next time you have a big group of people over I highly suggest lining up all your tables and setting them up like that!

So next time your planning a party or a gathering or just a regular dinner I highly suggest looking into serving sparkling to your guests and trying a few of Massimo’s pairings, I promise you won’t be disappointed!
