Watermelon and Feta Salad

This is a scrumptious salad, great for BBQ’s as the weather starts to heat up. What I love about this salad is although it’s simple to put together (there is no actual cooking involved), the combination of ingredients and flavours make it beautifully exotic and super tasty!

Serves 6-8

Ingredients:

  • ½ a watermelon
  • 200g Danish feta
  • ½ cup of roughly chopped salted pistachio nuts
  • 1 bunch of mint (leaves only)
  • 2-3 tbsp of rosewater

Method:

1) Remove the rind from the watermelon and cut it into 2cm cubes, then place into a large bowl.
2) Lightly crumble the feta over watermelon leaving it in larger chunks (don’t worry about the size as the cheese will break up when you toss the salad).
3) Add the pistachio nuts, mint and rosewater.
4) Gently toss the salad so all the flavours can “mingle” and serve immediately in a serving bowl or dish.
