Simply Cake

Let me start by saying I do not bake! I find desserts the most difficult thing to master in the kitchen. So I wanted to start off my dessert section with my go to cake recipe. It is the simplest cake to make AND to remember! Plus it is very versatile and you can easily add whatever flavour you want to it! There are endless options but to start with lets go basic, trust me when I say once you make this cake you will NEVER go back to packet cake mixes again!

Ingredients:

  • 200g of Self raising flour
  • 300g of Caster sugar (You can use white sugar and even raw sugar)
  • 5 Large eggs
  • ½ tsp of Baking powder
  • ½ tsp Vanilla extract
  • 200g of Cooled melted butter
  • 1 pinch of Salt
  • 1 Orange zested
  • 1-2 Oranges sliced (I like to use a combination of normal and blood orange when they are in season)

Method:

1) Preheat your oven to 200 Degrees or 180 fan forced.
2) In a large bowl place 200g Caster sugar, S.R flour, eggs, baking powder, vanilla, butter, salt and orange zest and stir with a wooden spoon until combined. (If there are lumps in your batter you can then use a whisk to finish combining all your ingredients)
3) Line a 20cm spring form cake tin with baking paper and pour the cake mix in. Place cake mix into oven for 30-35 minutes or until a skewer comes out clean. Let the cake cool slightly then turn it out onto a cake rack and allow to cool completely
4) To serve arrange orange slices on the top of your cake and then dust with lots of icing sugar. I like to serve this cake with lashings of whipped cream.
