Ginger Glazed Carrots

I love glazed carrots! Ah whom am I kidding; I love anything that’s glazed! Glazed ham, glazed carrots, glazed salmon the list goes on and on. So when I was cooking glazed carrots I couldn’t help but play around with the recipe and boy am I glade I did! These Ginger glazed carrots are our new family favourite, The Ginger People Organic Ginger Syrup (http://gingerpeople.com.au/organic-pantry-essentials/organic-ginger-syrup.html) makes a fool proof glaze for anything but it works particularly well with carrots. The Syrup itself is very well balanced offering sweetness yet the ginger hints at a little heat without being too hot making it perfect for both sweet and savory. One thing I will explain with this recipe is that because we are working with syrup you will end up with slightly charred ends to your carrots this doesn’t mean they are burnt! In fact this is done on purpose to counterbalance all the sweetness that is going on in the rest of the dish! This is a great side dish and if by some miracle you have some left over I suggest popping it in a blender with some Greek yogurt for the most delicious carrot dip you will ever have!

Ingredients:

  • 1/3 of a cup of The Ginger People Organic Ginger Syrup
  • 4 large carrots cut into wedges
  • 1 Tsp of The Ginger People Organic Minced Ginger
  • 2 Tbs of white wine vinegar
  • 1 Tsp of sea salt flakes, plus extra for garnish
  • 1 Tbs of parsley leaves

Method:

1) Preheat your oven to 180C.
2) Place carrots, The Ginger People Organic Ginger Syrup, vinegar, salt and The Ginger People Organic Minced Ginger in a baking tray and toss so all the carrots are well coated.
3) Bake carrots in the oven for 20 minutes or until tender and slightly charred on the tips. Remove the carrots from the oven and scatter over the parsley.
4) Serve carrots along side your favourite dish.
