There’s no point in denying the fact that I am a girl who loves a good cocktail! But not just any cocktail, I love fruity fresh cocktails that aren’t too sickly sweet and have a bit of an edge to them! Having said that I don’t want them to have 100 different ingredients or being too complicated to make. And that my friend is where my Ginger Crush comes into play. My sister was recently over from The Congo and while planning a cocktail party this cocktail party to celebrate her arrival this cocktail was born. I wanted something to go with the food I was making, yet could hold its own when it came to flavour but I also wanted it simple enough for anyone to make if I got too busy in the kitchen. With only one shot of vodka this isn’t a very strong cocktail, making it the perfect afternoon cocktail. If however you are like me and like your cocktails on the stronger side just add more vodka. Using both The Ginger People Organic Ginger Syrup and The Ginger Juice (http://gingerpeople.com.au/organic-pantry-essentials/organic-ginger-syrup.html) gives this cocktail a depth of flavour without being overwhelming. This is the only cocktail I will drink this summer, in fact I am drinking one now!
1) Start off by making your garnish. Thread a Crystallised Ginger piece onto a skewer followed by the pitted lychee and the mint, then finish with the remaining Crystallised Ginger. Set aside until needed (you can make a bunch of these up to 5 hours before you need them and then store them in an air tight container).
2) Fill a cocktail shaker with ice until it reaches half way.
3) Pour Ginger Syrup, Ginger Juice, lychee syrup, vodka, lime juice and mint leaves over the ice and seal with the lid. Give it a really good shake for 30 seconds.
4) Pour into a cocktail glass and top with your garnish.
