I know what your thinking, chocolate and olive oil mousse sounds a bit strange! But this is a George Calombaris recipe so you know its going to be great! The thing about chocolate mousse is its one of those dishes that either works beautifully or is a complete disaster! It can also take quite a while to set, and you don’t know if its worked until you have waited how ever many hours it has taken to set. However with this recipe there’s not setting time needed and the flavour is amazing! You can make this dish unto 2 hours ahead of time and place it in the fridge until your ready to serve, or serve it straight away!
1) Gently melt your chocolate in a bowl placed over simmering water. Make sure the water doesn’t touch the bottom of the bowl as this will cause the chocolate to seize and you’ll have to start again.
2) Stir in the olive oil and set aside to cool completely.
3) Meanwhile whip your cream in a separate bowl to form soft peaks.
4) Fold through cooled chocolate mix into your whipped cream, and serve in chilled glasses.
