Cream Cheese Icing

There is nothing quite like the Cream Cheese Icing on a beautifully moist carrot cake. Sweet yet savoury it’s the perfect combination for anyone like myself who doesn’t have the sweetest tooth in the room. Its beautifully thick and is able to hold its shape when lathered onto a rich dense cake. What I love about this icing is that it also works perfectly if your wanting to create a fancy looking yet no fuss cheese cake! Don’t believe me? Next time you make this icing put some aside for a cheeky mid-morning snack the following day. Then in a tumbler style glass layer some crushed Tim Tam biscuits then the Cream Cheese Icing and top with some fresh berries and you will have your new go to dessert! Either way you look at it this is a win/win recipe that you will use again and again!

Ingredients:

  • 300g of spreadable cream cheese
  • 150g of icing sugar mix (its much softer than pure icing sugar. You can use pure icing sugar just make sure you sift it before)
  • 100g of sour cream
  • 2 Tsp of vanilla extract

Method:

1) In a large bowl mix together all your ingredients until it is smooth and well combined. Cover with cling film and set aside until needed.

2) Lather the Cream Cheese Icing onto your favourite cake or layer into a glass for a no fuss cheese cake dessert.
