Makes 16 mini rolls
With Brazil being the host country for the World Cup it was clear to me that I needed to create a Soccer (Football) watching snack for them. Now when I think Brazilian food I think Brazilian BBQ, but who in their right mind wants to be tending to a BBQ when there is soccer to watch! After speaking to some Brazilian friends and hearing a number of suggestions there was one dish that kept coming up and that dish is…… Pao de Queijo also known as Cheese Bread! I know what your thinking, “I’ve never heard of that!” and this might be the case, but its a well loved dish in Brazil and at the end of the day this World Cup Special is all about learning about new dishes from familiar cuisines and learning about new cuisines all together. This recipe calls for tapioca flour, which for my gluten free readers is fantastic as tapioca flour is gluten free! Don’t let the name of this dish confuse you, it doesn’t taste like bread so if thats what your after I suggest you try my Chorizo Bread recipe, its more like Japanese mochi. But if your after something new and different then dish is the dish for you! And best of all everything gets thrown in to a blender then poured into muffin tins and baked!
1) Preheat your oven to 200C.
2) Place all the ingredients into a blender and pulse until smooth. Make sure you stop serval times to scrap down the sides (you can set this batter 3 days in advance and keep it in the fridge until you want to bake it).
3) Pour the cheese bread batter into your mini muffin tray and bake in the oven for 15-20 minutes or until puffy and golden.
4) Remove your cheese bread from the oven and cool slightly on a wire rack before serving (these little gems need to be served warm).
