Makes 1 1/2 Cups of dressing
Let me start off by saying that I LOVE Blue Vein Cheese!! I have loved it for as long as I can remember and the love of all things blue vein cheese runs through the many generations of my family, even my two children love it! I clearly remember while I was pregnant with Anabelle being at family BBQ’s and not being able to enjoy the cheese platters yet there was my then two year old son enjoying the lot, the blue cheese being his favourite. When it comes to picking blue cheese the smellier the better as far as I am concerned, but you can always go with a more mild flavoured blue vein cheese if you like. Whats great about this recipe is just how versatile it is, wedges of iceberg lettuce with this dressing drizzled over the top is fantastic and super simple yet it also works as a dipping sauce for Hot Wings and I’ve even been known to toss it through spaghetti with some bacon for a quick meal after a long day at work. If you have never tried blue vein cheese before or your not as big a fan of it as I am this recipe is a great way to enjoy blue cheese as the yogurt and the mayonnaise help balance out the pungent flavour.
1) In a medium bowl mix together the Greek yogurt, mayonnaise, worcestershire sauce and vinegar until smooth.
2) Next crumble in the blue cheese and season with salt and pepper to taste.
3) Lastly cover with cling film and set aside in the fridge until your ready to serve.
